I had many challenges growing up in very unhealthy environments to say the least. Through these challenges my wife and I have made many discoveries into what health truly entails. All of these many life lessons is what has brought me to the best key to what our bodies need to thrive.
In this crazy world it is extremely difficult to live healthy. Most of our food is lacking what it used to contain. This is why most people are getting sick and have very low immune systems. We are told we need to buy expensive supplements to get the vitamins and nutrients we need. Many of these supplements have questionable ingredients and are not bioavailable. In other words our bodies don't have everything they need to absorb the nutrients. This is why I have chosen to incorporate microgreens into my daily life and now I can invite you to partake in this amazing journey back into health.
Microgreens are seedlings of edible vegetables and herbs that are approximately 3-6 inches tall. They have an aromatic flavor and concentrated nutrient content and come in a variety of colors and textures. Some contain up to 40 times more vitamins, minerals and antioxidants than their mature counterparts. They may be small but are packed with nutrients including Iron, Zinc, Magnesium, Copper, Polyphenols, Antioxidants, Vitamin C, Calcium, Vitamin A, Folate, Protein, Fiber, Vitamin B etc.
By adding microgreens to your diet on a consistent basis, you can improve your overall health. Microgreens contain concentrated antioxidants in the form of vitamins, minerals, trace elements, enzymes, and plant pigment. These are the first line of defense against free radical damage and toxic build up. The presence of antioxidants help our skin to build a protective barrier against the dust and allergens present in our environment and are used for detoxification and anti-inflammation.
Microgreens and sprouts have distinct differences, though often confused as one. Both are grown from the same seeds but sprouts are generally harvested 3-5 days after sowing, while microgreens are harvested after 8-14 days. Sprouts are shorter in length at 1-2 inches, while microgreens grow between 3-6 inches in length. The most significant differences are in the appearance, flavor and nutrient values between the two. Microgreens come in vibrant colors and have the first set of true leaves formed resulting in stronger flavors and a higher nutritional profile. Sprouts are germinated seeds which have not yet developed a pronounced appearance, flavor and nutrient density. Sprouts can be a source of food borne illnesses as they grow in a damp environment. Microgreens have fewer health concerns as they are grown in a well ventilated environment and they are exposed to light.
